The modern concept of cereal food originated in 1860 when James Celeb Jackson who operated a medicinal Sanitarium in New York made a dried gram flour mixture known as Granula. Although Granula could be broken from small pieces it was very hard. Jackson found that soaking the mixture in milk rendered it edible.
Granula was the first manufactured cereal invented by James Celeb Jackson in 1863. It was made from baked wheat grain flour similar to Grape Nuts cereal. Granula grew in popularity and soon had imitators including a similar product from Kellogg’s called Granula. The Entrepreneurial possibilities of the thin baked ground cereal served the sanitarium in Battle Creek Michigan used to develop a similar product. C.W. Post a patient at the Battle Creek sanitarium also worked at the kitchen and there learned of Kellogg's recipe and in 1897. He later invented Grape Nuts a crunchy cereal consisting of flour salt and yeast which is baked in a sheet then broken into bits by putting it through a coffee grinder. About the same time Kellogg invented Corn Flakes which became a very popular breakfast cereal. Ready to eat breakfast cereals are available in four basic types flaked made from corn, wheat or rice that has been broken down into grits, then cooked with flavorings, syrups, then pressed into flakes between cool rollers puffed made by exploding cooked wheat or rice from from a pressure chamber resulting in expanding the grain to several times its original size.
Shredded Wheat is made from pressure cooked wheat then squeezed into strands by heavy rollers then cut into biscuits and dried. Granular is made by a process of which stiff dough is made from malted barley and wheat, flour, yeast, salt and water fermented then baked thoroughly crumbled then re-baked then is ground into rough bits. A final step in each process the cereal is fortified to restore vitamins lost through cooking and is often coated with sweet flavorings. Until the mid to late 1950’s the market for ready to eat cereal was relatively small, then grew in popularity and is considered one of the most successful stories in modern advertising. Using skillful product diversification and promotion for ready to eat cereals took over the breakfast food market. Late in the 20th century continued to be directed to the so called health food movement fostered or revived cereals composed of natural whole grains and fruits. These cereals later became increasingly popular. In the 1990’s the industry for ready to eat cereals sold the equivalent of several billion bowls to Americans yearly surpassing the market for traditional hot cereal options made from rolled oats then enriched with wheat farina.
