Delicious Scone Recipe

The Lite walnut scone recipe consists of wholesome ingredients high in protein delicately sweetened with Truvia sugar substitute sold as a tabletop sweetener or food ingredient made from Stevia leaf extract. Truvia created products meant to reduce sugar not taste with zero calories. The clean sweet flavor of Truvia Natural Sweetener Spoonable comes from nature in the form of a leaf.  The jar lid opens to allow measuring spoons to scoop up measured amounts when baking. A scone is a baked good usually made of either oatmeal or wheat flour with baking powder used as a leavening agent. This scone recipe is made with Almond flour high in protein combined with roasted glazed walnuts served with a dollop of vanilla yogurt drizzled with sugar-free maple syrup.  


Maple Walnut Scone Recipe 

3 1/2 cups almond flour

3 ½ tablespoons of Spoonable Stevia Leaf Jar (Truvia sweetener product)

5 tablespoons baking powder

¼ teaspoon salt

¾ cup olive oil butter spread chilled

1 egg lightly beaten

1 cup buttermilk chilled

2 tablespoons sugar free Maple syrup

1 cup chopped roasted walnuts with sugar free maple syrup ( Roasted Glazed Walnut recipe below)


Instructions

Combine almond flour, Truvia Sweetener, baking powder, salt, glazed Walnuts, in a large mixing bowl

Combine the dry ingredients using a whisk 

Add the chilled olive oil butter in small chunks

Using a pastry cutter or fork cut the butter unto the flour mixture

Mix the buttermilk and egg in a small bowl using a fork

Combine the flour mixture with the buttermilk and egg using a wooden spoon adding the liquid mixture a little bit at a time until moistened.

Turn the almond flour mixture out onto a lightly floured surface.

Knead the dough briefly to combine all ingredients

Roll the dough into ½ inch thick round shape

Cut the dough into 8 equal wedges

Place the scones onto a baking sheet lined with parchment paper

Crack on egg into a small bowl then add a splash of buttermilk

Brush the scones with the egg wash

Sprinkle the scones with a pinch of Truvia sugar substitute for added sweetness

Bake the scones in a preheated 390 degree C oven for 12-15  minutes until golden brown


Roasted Glazed Walnut Recipe

Ingredients

1 cup walnuts shelled roughly chopped

1 pinch of salt

1 ½ tablespoons sugar free maple syrup


Directions

Preheat your oven to 325 degrees F

Line a small baking sheet with parchment paper

Sprinkle one cup of chopped walnuts onto the parchment paper spreading the nuts into one single layer

Roast the walnuts in a preheated 325 degree F oven for 15 minutes

Remove the walnuts from the oven placing the tray onto a cooling rack.

Drizzle 1 ½ tablespoons of sugar free maple syrup all over the roasted walnuts

Sprinkle the walnuts with a pinch of salt

Toss the maple glazed walnuts with a fork to coat the mixture evenly.

Spread the walnuts into one single layer to cool completely.

The walnut mixture will be gently folded into the scone flour mixture.

Serve the Maple Walnut Scones drizzled with sugar free maple syrup and a dollop of vanilla yogurt for a delicious high protein snack option.
