Healthy Blueberry Compote

Blueberry compote has many uses in culinary cooking served warm, chilled, chunky, or smooth consumed as a versatile condiment drizzled over popular desserts and favorite recipes to complement any dish. Due to inexpensive ingredients, blueberry compote is easy to make using fresh spices and seasonal fruits. Blueberries are packed full of vitamins, minerals and antioxidants that help protect the body from free radical damage. Blueberry Compote Ingredients

4 cups of fresh or frozen blueberries

1 apple cored, peeled, diced

¼ teaspoon vanilla extract

1 tablespoon of Pyure organic sugar substitute

2 tablespoons freshly squeezed lemon juice

1 tablespoon fresh lemon zest

1 tablespoon butter

2 tablespoons pure water


Directions

Heat a 4-quart pot on low heat on your stove top oven.  Add 4 cups of fresh or frozen blueberries and apple pices to the pot.  Allow the fruit to cook on low heat for 10 minutes stirring occasionally to thicken.  Add ¼ teaspoonnnn of vanilla extract, 1 tablespoon of Pyure sugar substitute, 2 tablespoons freshly squeezed lemon juice, 1 tablespoon lemon zest, 2 tablespoons of water 1 tablespoon butter to the blueberry mixture. Remove the fruit from the heat.  Gently stir the blueberry compote mixture with a wooden spoon to combine all ingredients. Allow the mixture to cool for 10 minutes before serving.  Serve the Blueberry compote hot or chilled over your favorite dish or low calorie dessert option eaten as a satisfying treat.
