Mashed Cauliflower Low-Calorie Side Dish
Cauliflower is a nutritional powerhouse packed with protein essential nutrients, magnesium, riboflavin, phosphorus, thiamin, niacin, vitamin C, Vitamin K, Vitamin B6, Folate, potassium, pantothenic acid, manganese and dietary fiber.

Ingredients
1 head of cauliflower
1 cup of low-fat plain Greek yogurt
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
Instructions
1.) Steam the cauliflower in a steamer basket for 15 minutes until tender
2.) Place the cooked cauliflower in a bowl or food processor
3.) Add the remaining ingredients, greek yogurt, salt, pepper, olive oil
4.) Blend all ingredients until smooth
