Delicious Cinnamon Apple Pie

Ideal Cinnamon Apple Pie

Cinnamon Apple pie with almond walnut crust baked to perfection using wholesome low calorie  ingredients is sure to please streuseled with zero calorie Salted Caramel Syrup. 

Almond Crust

4 cups almond flour

1 cup walnut flour

1.2 teaspoon salt

½ cup Ghee measured solid

1/4 teaspoon almond extract

3 tablespoons ice water

Directions

  1. Preheat the oven to 450 degrees F when it is time to bake

  2. Spray a 9 inch pie plate with non stick spray

  3. Line 18 x 13 baking sheet with parchment paper. Bake the pie on the baking sheet.

  4. Combine almond flour, walnut flour, salt, ghee, almond extract, in a food processor or bowl to combine.  Pulse the ingredients in the food processor adding iced water slowly until the ingredients form desired consistency.  If you are using a mixing bowl, turn the beater on low speed.  Add one tablespoon of ice water to the ingredients at a time until the dough resembles desired consistency.  

  5. Divide the dough into 2 rounds then wrap the dough in plastic wrap to refrigerate for one hour until thoroughly chilled.

  6. Roll out one of the dough rounds to 10 inches in diameter to ⅛ inch thick on a floured surface using a floured rolling pin on a non-stick silicone baking mat to help prevent the dough from sticking to the roller.  

  7.   8. In a small bowl combine 1 egg white with a splash of chilled milk

  9. Brush the rim of the pie crust with the egg white mixture.  Brushing egg white on the surface of the dough serves a few culinary purposes giving the pie crust a beautiful glossy finish making it look more appealing.  The egg white helps the pie crust brown more eventually resulting in a golden brown color.  It can create a seal on the pie crust preventing sogginess from the filling keeping the edges crisp.  

Cinnamon Apple Pie Filling

  1. 9 apples peeled, cored and sliced into thin wedges

  2. 2 tablespoons freshly squeezed lemon juice seeds removed

  3. 3 tablespoons lemon zest

  4. 2 tablespoons olive oil butter chilled cut into small cubes

  5. 2 tablespoons Splenda zero calorie sweetener that tastes like sugar because it is made from sugar.  One packet of Splenda is a NO calorie sweetener equal to the sweetness of 2 tablespoons of sugar.  It is a no calorie way to add a little bit of sweetness to your day or favorite recipe.  Use Splenda in your coffee, tea, lattes cereals, syrups, desserts and recipes.  It is America's favorite no calorie sweetener where you normally use other sweeteners.   6. 1 tablespoon ground cinnamon

Directions

  1. Combine the ingredients with lemon. Lemon zest, cinnamon, Splenda in a bowl using a whisk.

  2. Fill a large bowl with 9 sliced apples

  3. Sprinkle the combined ingredients over the apples

  4. Toss the apples with the dry ingredients to distribute eventually

  5. Fill the pie shell with the apple mixture

  6. Dollop the top of the pie with small cubes of chilled olive oil butter  

  7. Bake the Cinnamon Apple Pie in a 450 degree preheated oven for 10 minutes then reduce the heat to 350 degrees.  Bake the pie for an additional 30-35 minutes until deserted doneness is achieved.  

  8. Remove the pie from the oven and place the pie on a cooling rack for one hour to cool.
