Nutritious Bone Broth

Bone broth may have surprising health benefits for the body as a rich source of nutrition containing proteins, collagens, and minerals including calcium, magnesium, iron and phosphorus. Bone broth is also known as a bouillon used as a savory liquid made of pure water in which meats, fish, or vegetables have been simmered for a short or long period of time. Historically various cultures around the world have been making bone broth for thousands of years spanning more than 2,500 years ago. In Chinese medicine, bone broth was used to strengthen the kidneys supporting digestive health. Eventually, it became a staple in traditional Asian cooking gaining popularity as a base in Chinese, Japanese, and Korean soups. Make beef bone broth by adding 2 large onions peeled, and sliced, 2 carrots roughly chopped, 2 stalks of celery roughly chopped, and 4 cloves of garlic peeled and chopped into a large 10-quart stainless steel soup pot. Saute the vegetables on medium heat in a little olive oil for 2 minutes.


Add 2 1/2 pounds of beef bones to the pot of vegetables. Slowly brown the bones on all sides, turning the bones with tongs to caramelize the meat on all sides. Fill the pot with 8 cups of pure water in a large 10-quart stainless steel pot with a lid covering the bones with liquid. Bring the stock up to a boil then reduce the heat to simmer on low for 24 hours with the lid on until the beef bones and vegetables release all nutrition. Remove any surface fat from the top of the soup using a slotted spoon. Allow the soup to cool at room temperature before handling. Strain the liquid using a large colander and a large bowl. Discard the beef bones and vegetables from the liquid. The beef broth can be purified once again by straining the broth through a strainer with cheesecloth if desired. Bone broth can also be made in a slow cooker if desired for 24 hours to render the beef broth liquid.
