Micronutrient deficiency is defined as a lack of essential vitamins and minerals required in small amounts by the body for proper growth and development. Overcoming micronutrient deficiencies strategies include dietary improvement including consuming a diet packed full of micronutrient-rich food sources.

The world's biggest food manufacturers recognize the need for food fortification, the process of adding micronutrients essential trace elements, and vitamins to food people typically purchase. Food fortification can be carried out by food manufacturers in the industry or by governments as part of public health policy which aims to reduce the number of people who have dietary deficiencies within a population.

Many foods and beverages have been fortified worldwide who must abide by food labeling regulations to support the nutritional rationale. The food developers' point of view suggests they need to consider the costs associated with a new fortified product and whether or not there will be a market to support the change. Food fortification initiative programs exist in several countries across the globe for folate, niacin, riboflavin, thiamin, vitamin A, vitamin B12, vitamin B6, vitamin D, and vitamin E. Mineral fortifications include iron, iodine, calcium, fluoride, zinc, and selenium.

Fortified cereals enriched with vitamins and minerals may help reduce the risk of nutrient deficiencies. Micronutrient deficiencies can have a devastating effect on health that may lead to metabolic syndrome, obesity, chronic systemic disease cardiovascular disease, diabetes, and osteoporosis skeletal disorder. Sprouting edible microgreens is a great source of nutrition high in antioxidant compounds and is considered a superfood when harvested early.

Undernutrition can lead to wasting in acute cased muscle and tissue causing muscle and fat tissue decrease due to malnutrition in people who are eating diets too low in caloric intake. Nutrients can be grouped by micronutrients as carbohydrates, dietary fiber, healthy fats, proteins, water needed, or micronutrients high in vitamins and minerals.

Dietary Guidelines for Americans recommend that carbohydrates make up 45-65 percent of your total daily calories consumed. This translates into 225-325 grams of carbohydrates per day. The top five healthy carbohydrates include Qunoria, oats, blueberries, roasted nuts, legumes. Superfoods benefit increase endurance, Carbohydrates are a type of nutrient found in many beverages and food options.  Most carbohydrates are found in plant-based foods including vegetables, grains, fruit, nuts, seeds, and beans consumed as naturally occurring carbohydrates lower on the glycemic index greater micronutrients.
